I have worked on the HP forum () to try to solve this, they've run me through a variety of solutions. I went to update the driver but it uses some HP App in the APP store and that's where the problem began.

This older printer uses a simple driver package so I was able to simply download the standalone driver update from HP (11/20) and boom, all good.
